It's Waffle Iron Day!

Waffle Iron day, and we made zucchini banana waffles.  Have you ever tried them?  I tried to get all the moisture out of the zucchini that I could, but they didn't cook as well on the inside as I would have liked, but they were still good.

I got the recipe from  JKLEISCHNER at Sparkpeople.  I adapted it a little, I used whole wheat flour, and 2 egg whites...but ya know.


Banana Zucchini Bread
    1 large zucchini
    6 cups whole wheat flour
    4 tbsp baking powder
    4 tsp cinnamon
    4 T green leaf stevia
    5 cups skim milk with 5 T lemon juice
    4 large eggs
    2 large egg whites
    1 tsp vanilla extract
    2 bananas, mashed

Preheat waffle iron.


Clean the zucchini thoroughly and trim the ends. Cut into large chunks and pulse in a food processor until very smooth. Line a small colander with paper towel and set it over a bowl. Pour the pureed zucchini into the colander to drain off the excess liquid. Let drain for about 10 minutes.
In a large mixing bowl, combine the flour, baking powder, salt, cinnamon, and sugar. Mix well.
In another bowl, whisk together the eggs, buttermilk, and vanilla. Mash banana and mix with other liquids. Then mix the wet into the dry and add zucchini and stir well.
Spray the waffle iron with cooking spray. Pour batter over the waffle iron and cook.
Serve hot with butter and syrup.
