Kale and quinoa - the best salad!

okay - we had a family party over Christmas where my hubby needed to take a salad.  Since I was supposed to bring desert, we traded.  ;)  He'd made all the Christmas candy that we still had left overs, and so I made a yummy kale quinoa salad that ended up being a hit.  (at least by the adults.)
Unfortunately I didn't get a photo taken of it...so just imagine bright green interspersed with little quinoa grains, onion and nuts.  ;)

But you don't have to imagine how it tastes!  So, here's the recipe.  Enjoy!

Kale, quinoa and turkey salad!
    6 cups of kale chopped
    2 cups quinoa cooked in (2 cans) low sodium chicken broth/cooled
    1 Cup chopped turkey breast
    1 C Rickland Orchards trail mix
    1/2 red onion, chopped fine

    roasted garlic and herb seasoning
    1/2 C parmesan cheese, grated

    Dressing
    2 TB Lemon juice
    4 tbsp olive oil
    1 Tb roasted garlic & herb
    salt and pepper to taste
     Cook the quinoa with 2 cans of chicken broth, add turkey as cooking. Leave to cool. Saute kale in pan spray, put in large bowl to cool. add trail mix, stir. Add onion. add parmesan cheese.
    Combine oil, lemon juice and spices. Pour over salad and mix.
